Quick Pudding Recipe

I love giving my children pudding after they've eaten all their supper. At school we always had a few pudding options with both lunch and supper - not sure how I stayed thin!! I especially enjoy hot puddings. I often want to give the children Rice Pudding or Tapioca but both take too much time to either prepare, (you have to soak the Tapioca over night) or to cook, (Rice Pudding can take up to an hour in the oven). So I want to share with you my quick, easy and super yummy take on the above.

I found this recipe years ago in the Australian Woman's Weekly and it has been a staple in my children's diet. I have even tweaked the recipe adding other yummy bits just to add a bit of variety. The main ingredient is good old Cous Cous, I am sure you have some floating around your larder, waiting around for your next Moroccan dish or perhaps a salad. Well get it out of the larder, blow the dust of the jar and get cooking!! One word of advise, it takes about 5 minutes to cook, best if you are standing near it as many a time I have walked away and ended up with a burnt pudding and an unforgivable burnt pan.



Cous Cous Pudding




Serves 1 Child
1 Tablespoon of Cous Cous
1 Teaspoon of Sugar
Pinch of Cinnamon
3/4 Cup of Milk

Combine all ingredients in a pan, simmer until thickened.

I always want it to serve 3 children. I have found that the best thing to do in this case is increase the amount of Cous Cous, (I use 3 Tablespoons) keep the sugar the same and just slightly increase the milk. I don't measure the milk but just make sure that it is covering the Cous Cous by at least an 2 inches. And there you have it, quick, easy, yummy and pretty healthy - all that whole grain goodness!!

Now to the tweaking, the photo above it my chocolate version, use all the above ingredients but just add 2 Tablespoons of Cocoa Powder. I have also swapped the cinnamon for vanilla extract for a vanilla flavoured delight. I sometimes add raisins, put chopped bananas on top or even a dollop of jam. The possibilities are endless.
